Monday morning. Start of another workweek after a VERY busy weekend.
– I had an active weekend in regards to church. Of course, being the second weekend of the month, it was the newsletter weekend. Usually I try to take the second Saturday of the month off, as in not go to the Saturday service to run the power point, in order to take my time working on the newsletter. But our Associate in Minister finished her studies last month and graduated from the seminary. So she has left the church in pursuit of a call to her own church. This leaves our pastor a little short handed so I told him that I would run the power point on Saturday just so his life will be a little less stressful. But that meant I had to get up at 5:00 in order to get to the grocery store early to get my shopping done and buy the ingredients for the potato salad I said I would make, get home to finish the power points for Sunday and then work on the newsletter, while boiling the potatoes for the salad, and get to church by 3:45 or so for the service. Then, after the service, I ended up staying for the Church Life meeting as an “honorary” member (I help out when I can but am not an official member of the committee). After that it was home to make the potato salad. That was just Saturday. Sunday there was church and then a movie with a friend (more on that below), lunch out and then shopping. All in all…BUSY!!
– In regards to the potato salad – I said a while ago that I would make potato salad for the Friendship Lunch we have at our church on the second Monday of the month. This is one of our free meals that we do every month. At first, I was asked to make five pounds of potato salad but then I was asked if I could make it ten pounds. 10 pounds!! I agreed just for the whole challenge of it and because I’m always happy to help out. So do you want to know what is in ten pounds of potato salad? I’ll tell you: 10 pounds of russet potatoes, boiled with skins on, peeled and then cut up in about one inch pieces; 1 ½ large Vidalia onions, chopped; six or seven stalks of celery, chopped (I used the whole center core of the celery with the leaves); 10 hard boiled eggs, chopped; one cup of sweet pickle relish; ½ a bottle of yellow mustard; and 1 ½ jars of mayonnaise. Oh, and salt and pepper to taste. I had to use my big ass pot to mix it in and had to set it in the sink so it would be low enough to get my hands inside of it. I used my hands to mix it all since a spoon would just be too difficult not to mention I was trying not to break up the potatoes too much. Mixing it by hand enabled me to do it gently but thoroughly. I tasted it when I was done and it was absolutely delicious, if I do say so myself. I packed it in three rectangular nine-cup containers so it ended up being 27 cups of potato salad. I hope everyone likes it. I can’t wait to find out.
– On to the movie. The movie we saw yesterday was “Killers” starring Ashton Kutcher and Katherine Heigl. It was quite good. Funny at times and with a lot of twists and turns. A little convoluted but all together entertaining. May have to rent it and see it again when it is out on DVD mostly because I had to go to the bathroom at one point and missed about five minutes or so. Oh well. That’s what happens when I drink a whole cup of tea before going to the movies.
So it’s a new workweek. I have a blood test this morning, dental appointment this afternoon and a doctor appointment tomorrow afternoon. Time to get started so I can get to work early and get things accomplished before I have to leave early for the dentist. Although I feel like I need a day off to recover from my weekend. Sigh. Maybe I’ll take a few days vacation time this summer to just sit around and do nothing. Wouldn’t that be wonderful????
