Cookies!!!

Well, I might be done. Then again, I do have more ingredients…

I have baked eight different kinds of cookies and two to three batches of each kind for my annual Christmas cookie baking extravaganza!

The list is: santa’s whiskers, snickerdoodles, white chocolate chip cranberry, jam thumbprints, russian tea cakes, merry christmas cookies, salted nut bars and spritz cookies. YUM!!

I had a list of about 30 people I wanted to give cookies to as Christmas presents. But, with all the cookies I made, I didn’t make enough. I filled all the tins and I still had about eight people left. Granted I still have some cookies but I am out of the russian tea cakes and the merry christmas cookies that are left are all too big to fit in the bags (I was experimenting with cookie cutters and made some that were too big). So I see some more baking in my future. But not tonight.

I am tired. Three days straight of baking with a little shopping thrown in is exhausting. Part of my exhaustion comes from the fact that I can only bake one tray of cookies at a time. If I had more ovens or could put more trays in at at time, I could work faster and wouldn’t be so tired now. Maybe some day I will have a decent kitchen and my cookie baking extravaganza won’t be such a exhaustive expedition.

I really will be doing more baking next week. Just need tomorrow to rest up and then I will be back at it. Just can’t decide if I should just do more cookies or if I should make some bread as well. I guess I’ll see what mood I’m in when I start to bake. Maybe I’ll do both…have to wait and see.
